Valerian is a perennial plant that produces cluster-heads of small, trumpet-like flowers. Although the blossoms are sweetly scented, the root of the plant is more reminiscent of old cheese. Yet, this is where the value of the herb resides.
In 16th century England, valerian flowers were commonly used in perfumery. Also, despite the less than pleasant aroma, valerian root was used as a spice during this time.
Although it may be prepared as tea, valerian root is not used for culinary purposes.
